There’s nothing more inspiring than a beautiful plate of food popping with color and texture and yummy goodness. We want food that is not only pleasing to the eyes but also food that makes our taste buds do the happy dance. And food that make our bodies feel great!
The words “healthy eating” don’t usually bring to mind thoughts of flavorful, luscious food. I hope these vegetarian dinner recipes change that.
The healthy dinner recipes here are all consistent with a whole food plant based diet. Why? Because the surest way to vibrant health is through whole, plant based foods that are not weighed down by oil and highly processed ingredients.
All of these recipes are ones that my family eats regularly. They are low in fat, have no cholesterol, high in fiber and are made with fruits, vegetables, whole grains, legumes, nuts and seeds. Dairy is not included in these dinner recipes (see why not here). If you or your family aren’t used to eating plant based meals, start with meals that are familiar and just keep introducing the newer things slowly.
